Ingredients

2 cups rolled oats

1/2 cup peanut butter

1/2 cup honey or maple syrup

1/2 cup chocolate chips

1 teaspoon vanilla extract

Pinch of sea salt

Instructions

1. In a large bowl, combine the rolled oats, peanut butter, honey or maple syrup, chocolate chips, vanilla, and a pinch of sea salt. Mix until everything is well combined and the mixture holds together when pressed.

2. Line an 8x8-inch baking dish with parchment paper. Press the oat mixture evenly into the pan. If the mixture is too sticky, wet your hands with a bit of water to help press it down. Place in the refrigerator to set for at least 1 hour, or overnight.

3. Once set, remove from the refrigerator and cut into bars. Enjoy as is, or drizzle with more melted chocolate for an extra indulgent treat.

Notes

For a lower sugar version, use 1/4 cup honey or maple syrup instead of 1/2 cup. You can also substitute almond butter or sunflower seed butter for the peanut butter, if desired.
