Ingredients

Instructions

1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan and set aside.
2. In a medium bowl, whisk together the flour, brown sugar, butter, baking soda, and salt. Stir in the vanilla extract, oats, coconut flakes, and pecans. Stir in the chocolate chips.
3. Press the mixture into the prepared pan. Bake for 20 minutes, or until lightly golden brown. Let cool completely. 4. In a medium saucepan, melt the butter over medium heat. Add the evaporated milk and sugar, stirring until the sugar is dissolved. Bring to a boil, reduce the heat to low, and simmer for 5 minutes. Remove from the heat and let cool slightly. 5. In a medium bowl, whisk together the egg yolks and vanilla extract. Slowly add the cooled milk mixture, whisking constantly. 6. Pour the mixture over the cooled bars. Notes

For a stronger coconut flavor, use sweetened shredded coconut instead of flakes. You can also substitute walnuts or almonds for the pecans, if desired. If you don't have evaporated milk, you can use regular milk or cream. The bars will keep for up to 5 days stored in an airtight container.
