Ingredients

For the cake:

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ cup cocoa powder
  • 2 large eggs
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water

For the frosting:
  • 2 cups butter, softened
  • 4 cups confectioners’ sugar
  • ½ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Instructions

To make the cake:

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together the flour, baking powder, baking soda, and cocoa powder.
  • In a separate bowl, beat together the eggs, sugar, brown sugar, oil, and vanilla extract until light and fluffy.
  • Add the dry ingredients to the wet ingredients, alternating with the buttermilk. Beat until combined.
  • Fold in the boiling water and mix until combined.
  • Pour the batter into the prepared cake pans, and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before turning out onto wire racks to cool completely.

To make the frosting:
  • In a large bowl, beat the butter until light and fluffy.
  • Add the confectioners’ sugar, cocoa powder, and vanilla extract, and beat until combined.
  • Add the heavy cream and beat until light and fluffy.
  • Spread the frosting between the layers of the cooled cake, and on the top and sides.

Notes

If the frosting is too thick, you can add a little more heavy cream or milk to thin it out. If it is too thin, you can add a little more confectioners’ sugar to thicken it up. You can also add a few drops of food coloring to the frosting to make it colorful!
