Ingredients

2 cups all-purpose flour

Instructions

1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat together the sugar, eggs, and almond extract until light and fluffy.

4. Add the dry ingredients to the wet ingredients and mix until combined. Fold in the chocolate chips and almonds.

5. Divide the dough in half and shape each half into a log about 12” (30 cm) long. Place the logs onto the prepared baking sheet.

6. Bake for 25 minutes, then remove from the oven and cool for 10 minutes.

7. Reduce the oven temperature to 325°F (160°C). Carefully slice the logs into 1/2” (1 cm) slices and place them back on the baking sheet.

8. Bake for an additional 15 minutes, or until golden brown. Cool completely before serving.

Notes

You can use any type of chocolate chips you like. Dark chocolate, milk chocolate, white chocolate, or a combination of all three.

If you don’t have almond extract, you can use vanilla extract instead.

You can store the biscotti in an airtight container for up to two weeks.
