Ingredients

For the muffins:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cocoa powder

Instructions

Preheat oven to 350 degrees F (175 degrees C). Grease or line a muffin pan with paper liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.

In a large bowl, cream together the melted butter and sugar. Beat in the eggs one at a time. Beat in the vanilla extract and buttermilk. Gradually add in the dry ingredients and mix until just combined. Fold in the chocolate chips.

Divide the batter between the prepared muffin cups, filling each about 2/3 full. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For the best results, use fresh ingredients and make sure not to overmix the batter. If you overmix the batter, the muffins will be tough and dry.

You can store the muffins in an airtight container at room temperature for up to 3 days.

You can also freeze the muffins for up to 3 months. To thaw, simply place in the refrigerator overnight.
