Ingredients

For the caramel balls:

  • 1 cup butter, melted
  • 2 cups light brown sugar
  • ½ cup corn syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the chocolate coating:
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons butter

Instructions

1. In a medium saucepan, melt the butter over medium heat. Add the brown sugar, corn syrup, and salt, and stir until the sugar is completely dissolved. Bring the mixture to a boil and let it boil for 3-4 minutes, stirring constantly. Remove the pan from the heat and stir in the vanilla extract.

2. Pour the caramel mixture into a greased 9x13-inch baking pan. Place the pan in the refrigerator and let it cool for at least one hour.

3. Once the caramel has cooled, use a small ice cream scoop or spoon to form the caramel into 1-inch balls. Place the balls on a parchment-lined baking sheet and place the baking sheet in the freezer for at least 30 minutes.

4. In a medium bowl, melt the semi-sweet chocolate chips and butter together in the microwave, stirring every 30 seconds until the mixture is completely melted and smooth.

5. Dip the caramel balls in the melted chocolate, one at a time, using a fork to roll them around until they are completely covered. Place the chocolate-covered caramel balls back on the parchment-lined baking sheet and let them cool until the chocolate has hardened.

6. Serve the chocolate-covered caramel balls immediately or store them in an airtight container in the refrigerator for up to one week.

Notes

For a different flavor, you can add ½ teaspoon of peppermint extract to the caramel mixture before pouring it into the pan. This will give the caramel balls a refreshing minty flavor. You can also substitute the semi-sweet chocolate chips for dark or white chocolate chips for a different flavor.
