Ingredients

For the loaf:

3 ripe bananas

2/3 cup of melted butter

2 eggs

1/2 cup of brown sugar

1/4 cup of white sugar

1 teaspoon of vanilla extract

1 teaspoon of baking soda

1 teaspoon of baking powder

1/2 teaspoon of salt

1 1/2 cups of all-purpose flour

1/2 cup of semi-sweet chocolate chips



For the glaze:

3/4 cup of semi-sweet chocolate chips

2 tablespoons of butter

1 tablespoon of light corn syrup

1/4 cup of heavy cream

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.



2. In a large bowl, mash the bananas. Stir in the melted butter, eggs, brown sugar, white sugar, and vanilla extract. Mix in the baking soda, baking powder, salt, and flour. Fold in the chocolate chips.



3. Pour the batter into the prepared pan. Bake in preheated oven for 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.



4. To make the glaze, melt the chocolate chips and butter in a medium saucepan over low heat. Stir in the corn syrup and cream. Remove from heat and let cool for 10 minutes.



5. Drizzle the glaze over the cooled loaf and let it set for 10 minutes before serving.

Notes

The glaze can be made up to a day in advance and stored in the refrigerator. When ready to use, simply warm it over low heat until it is pourable. To store the loaf, wrap it tightly in plastic wrap and store at room temperature for up to 3 days. You can also freeze the loaf for up to 3 months.
