Ingredients

For the cake:


- 2 cups all-purpose flour

- 1 cup cocoa powder

- 1 teaspoon baking powder

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1 cup vegetable oil

- 2 cups granulated sugar

- 4 large eggs

- 1 teaspoon vanilla extract

- 1 cup buttermilk

- 1 cup chocolate chips

- 1 cup chopped cashew nuts


For the frosting:


- 1/2 cup butter, softened

- 1/2 cup cocoa powder

- 4 cups confectioners' sugar

- 2 tablespoons milk

- 1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.


2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.


3. In a large bowl, cream together the vegetable oil and sugar. Beat in the eggs, one at a time. Add the vanilla extract and mix well. Add the dry ingredients in three batches, alternating with the buttermilk. Stir in the chocolate chips. Pour batter into the prepared pan.


4. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.


5. To make the frosting, cream together the butter and cocoa powder until light and fluffy. Beat in the confectioners' sugar, one cup at a time. Add the milk and vanilla and beat until smooth. Spread the frosting over the cooled cake and top with the chopped cashews.

Notes

This cake can be stored in an airtight container in the refrigerator for up to 4 days. If the cake is left out at room temperature, it will last up to 2 days.
