Ingredients

Crust: 1 1/2 cups graham cracker crumbs 1/4 cup butter, melted Cheesecake: 2 (8 ounce) packages cream cheese, softened 1/2 cup white sugar 2 teaspoons vanilla extract 3 eggs 3 tablespoons all-purpose flour 1/3 cup semisweet chocolate chips Ganache Topping: 1/2 cup semisweet chocolate chips 1/4 cup heavy cream

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan. 2. In a medium bowl, mix together graham cracker crumbs and melted butter. Press into the bottom of the prepared pan. 3. In a large bowl, beat cream cheese until smooth. Gradually beat in sugar and vanilla until blended. Add eggs one at a time, beating just until blended. Beat in flour. Stir in chocolate chips. Pour over crust. 4. Bake in preheated oven for 45 minutes. Turn oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. 5. To make ganache topping, place chocolate chips in a medium bowl. Heat cream in a small saucepan over medium heat until it just begins to boil. Pour over chocolate chips and stir until melted and smooth. Spread over cooled cheesecake. 6. Refrigerate for at least 3 hours before serving.

Notes

This recipe can be made with other chocolate chips. Try using white chocolate chips, or a combination of different types of chocolate chips for a more complex flavor. If desired, add a layer of raspberry jam or other preserves to the top of the cheesecake before adding the ganache topping. For a richer flavor, try adding 1/4 cup of cocoa powder to the cheesecake batter.
