Ingredients

  • 3 large eggs
  • 2/3 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup cocoa powder
  • 1/4 cup canola oil
  • 1/4 cup whole milk
  • 1 1/2 cups frozen or fresh cherries, pitted and diced
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1/2 cup semi-sweet chocolate chips

Instructions

Preheat your oven to 350 degrees Fahrenheit. Line a 10-inch jelly roll pan with parchment paper and lightly grease. In a medium bowl, whisk together the eggs and 2/3 cup granulated sugar until the mixture is light and fluffy. Add the flour, baking powder, salt and cocoa powder and whisk to combine. Add the oil and milk and whisk until smooth. Pour the batter into the prepared pan and spread into an even layer. Bake for 15 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.

In a medium saucepan over medium heat, combine the cherries, 1/3 cup granulated sugar, cornstarch, and vanilla extract. Cook, stirring occasionally, until the mixture thickens and the cherries are softened, about 5 minutes. Remove from the heat and let cool. Once the cherry filling is cooled, spread it evenly over the cooled cake. Roll the cake up lengthwise, starting from one short end. Place the roll onto a baking sheet lined with parchment paper.

In a small saucepan, bring the heavy cream and butter to a low boil. Add the chocolate chips and stir until fully melted. Pour the chocolate over the log and spread into an even layer. Place the baking sheet in the refrigerator to set the chocolate, about 15 minutes. Slice and serve the log chilled.

Notes

This chocolate cherry log is best enjoyed the same day it is made. If you do not have fresh cherries, you can use frozen cherries instead. Just make sure to thaw and drain them before adding them to the recipe. You can also substitute other fruits for the cherries, such as raspberries, blueberries or strawberries.
