Ingredients

- 1 cup unsalted butter

- 1/2 cup evaporated milk

- 1/4 cup espresso powder

- 4 cups granulated sugar

- 2 cups semi-sweet chocolate chips

- 12 ounces semi-sweet chocolate, chopped

- 1 teaspoon vanilla extract

- 1/4 teaspoon salt

Instructions

1. Grease a 9-inch square baking pan with butter and set aside.

2. In a large saucepan, combine the butter, evaporated milk, espresso powder, and sugar. Cook over medium heat, stirring constantly, until the butter has melted and the sugar has dissolved. Increase the heat to medium-high and bring the mixture to a boil. Boil for 3 minutes, stirring constantly.

3. Remove the pan from the heat and stir in the chocolate chips, chopped chocolate, vanilla, and salt. Stir until the chocolate has melted and the mixture is smooth.

4. Pour the mixture into the prepared pan and spread evenly. Allow to cool for at least 2 hours before serving.

5. Cut into small squares and serve. Store any leftovers in an airtight container for up to one week.

Notes

- If you don’t have espresso powder, you can substitute instant coffee granules.

- To make the fudge even more decadent, you can add chopped nuts or other additions such as dried fruit, coconut, or candy pieces.

- If the fudge is too soft, you can place the pan in the refrigerator for 30 minutes to firm it up.
