Ingredients

2 cups heavy cream

1 cup whole milk

2/3 cup granulated sugar

1 teaspoon vanilla extract

Pinch of salt

1/2 cup chopped fresh mint leaves

1/2 cup semi-sweet chocolate chips

Instructions

1. In a medium bowl, whisk together the heavy cream, milk, sugar, vanilla extract, and salt until combined. Set aside.

2. Place the mint leaves in a small bowl and pour the cream mixture over them. Cover and place in the refrigerator for at least 1 hour to allow the mint to infuse the cream.

3. After 1 hour, strain the cream mixture through a fine-mesh sieve to remove the mint leaves. Discard the leaves.

4. Pour the cream mixture into the bowl of an electric mixer and beat on low speed until the mixture is thick and fluffy, about 3-4 minutes.

5. Turn off the mixer and fold in the chocolate chips. Transfer the ice cream mixture to a freezer-safe container and freeze for at least 6 hours or overnight.

Notes

This recipe will yield about 1 quart of ice cream. To make a lighter version, you can replace the heavy cream with half-and-half or whole milk.
