Ingredients

For the Cake:

2¼ cups all-purpose flour

2 cups granulated sugar

¾ cup cocoa powder

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon salt

1 cup buttermilk

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup hot coffee


For the Frosting:

2 cups heavy cream

2 cups semi-sweet chocolate chips

2 tablespoons butter

1 teaspoon vanilla extract

Instructions

For the Cake:

1. Preheat oven to 350°F and grease and line two 9-inch round cake pans with parchment paper.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Set aside.

3. In a medium bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract. Slowly stir the wet ingredients into the dry ingredients until just combined.

4. Pour the hot coffee into the batter and stir until just combined. Do not overmix.

5. Pour the batter into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely before frosting.


For the Frosting:

1. In a medium heatproof bowl, combine the heavy cream, chocolate chips, and butter. Place the bowl over a pot of simmering water and stir until the chocolate and butter are completely melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.

2. Allow the frosting to cool for 10 minutes before using.

3. To assemble the cake, place one layer of cake on a cake stand or plate. Spread ½ cup of frosting over the top of the cake. Top with the second layer of cake and spread the remaining frosting over the top and sides of the cake.

4. Drizzle with melted chocolate if desired.

Notes

This cake is best served the same day it is made, but it can be stored in an airtight container in the fridge for up to 3 days. Be sure to bring to room temperature before serving.
The cake can also be frozen for up to 3 months. Thaw in the refrigerator overnight before serving.
