A dollop of freshly-whipped cream, a sprinkle of cocoa powder, and a drizzle of melted white chocolate take this pie to the next level.

Ingredients

For the Pie Crust:
-1 ½ cup graham cracker crumbs
-6 tablespoons melted butter
-2 tablespoons granulated sugar
For the Filling:
-1 cup white chocolate chips
-1 (8-ounce) package cream cheese, softened
-¾ cup granulated sugar
-1 teaspoon pure vanilla extract
-1 cup heavy cream For the Topping:
-Freshly whipped cream (optional)
-Cocoa powder (optional)
-Melted white chocolate (optional)

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie plate with butter or cooking spray. 2. To make the crust, combine the graham cracker crumbs, melted butter, and sugar in a medium bowl. Mix until everything is well combined and the crumbs are evenly coated with the butter. 3. Press the crumb mixture into the prepared pie plate. Bake the crust for 8-10 minutes, or until the edges are lightly golden brown. Remove from the oven and let cool completely. 4. To make the filling, place the white chocolate chips in a medium heat-safe bowl. Microwave in 30-second increments, stirring in between, until the chips are completely melted and smooth. 5. In a separate bowl, beat together the cream cheese, sugar, and vanilla extract until light and fluffy. Slowly beat in the melted white chocolate until everything is well combined. 6. In a medium bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the white chocolate mixture until everything is evenly combined. 7. Pour the filling into the cooled pie crust and spread into an even layer. Refrigerate for at least 2 hours before serving. 8. Before serving, top with freshly whipped cream, cocoa powder, and melted white chocolate, if desired.

Notes

-If you’re short on time, you can use a store-bought graham cracker crust. -For an even creamier filling, you can use full-fat cream cheese instead of reduced-fat. -The filling can also be made ahead of time and stored in the refrigerator for up to 3 days. -If the filling is too thick, you can add a tablespoon of heavy cream or milk until it reaches the desired consistency.
