Ingredients
For the cupcakes:

- 3 cups confectioners' sugar
- 2 tablespoons Bailey's Irish Cream
- 1/4 teaspoon salt
Instructions
For the cupcakes:
- Preheat oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a small bowl, whisk together the cocoa powder and 1/2 cup of boiling water until smooth. Set aside to cool.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then beat in the vanilla extract.
- Alternately beat in the flour mixture and the buttermilk, beginning and ending with the flour mixture. Beat in the cooled cocoa mixture.
- Divide the batter evenly among the prepared muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Let cool in the pan for 5 minutes, then remove to a wire rack to cool completely.

- In a medium bowl, cream together the butter and confectioners' sugar until light and fluffy. Beat in the Bailey's Irish Cream and salt.
- Frost the cooled cupcakes with the frosting.
Notes
The cupcakes will keep in an airtight container at room temperature for up to 3 days. The frosting can be stored in the refrigerator for up to 1 week. Re-whip before using.
