Ingredients
For the cake:
- 200g butter
- 200g caster sugar
- 4 large eggs
- 150g self-raising flour
- 25g cocoa powder
- 2 tablespoons of milk
- 2 tablespoons of vegetable oil
- 1 teaspoon of vanilla extract
- A pinch of salt
For the chocolate frosting:
- 100g dark chocolate
- 50g butter
- 2 tablespoons of cocoa powder
- 2 tablespoons of icing sugar
- 1 teaspoon of vanilla extract
- A pinch of salt
- 2 tablespoons of boiling water
Instructions
1. Preheat the oven to 180°C/350°F. Grease and line a 20cm/8-inch springform cake tin with baking parchment.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Beat in the eggs, one at a time, until fully incorporated.
4. Sift the flour, cocoa powder and salt into the bowl and mix until combined.
5. Slowly add in the milk, oil and vanilla extract and mix until the batter is smooth.
6. Pour the batter into the prepared cake tin and bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the centre comes out clean.
7. Allow the cake to cool completely before frosting.
8. To make the frosting, melt the dark chocolate and butter together in a heatproof bowl over a pan of simmering water.
9. Once melted, add the cocoa powder, icing sugar, vanilla extract and salt and mix until combined.
10. Slowly add the boiling water, stirring until the frosting is smooth and creamy.
11. Spread the chocolate frosting over the cooled cake and decorate as desired.
Notes
This cake is best served at room temperature, but can be kept in an airtight container in the fridge for up to 5 days.
