Ingredients

For the Cake:

1 cup all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking soda

1/4 teaspoon salt

3/4 cup vegan butter, softened

1 cup vegan buttermilk

1 cup vegan cane sugar

1 teaspoon vanilla extract

1 flax-egg*

For the Frosting:

1/2 cup vegan butter, softened

2 cups vegan powdered sugar

1/4 cup cocoa powder

1 teaspoon vanilla extract

2-3 tablespoons non-dairy milk

Instructions

Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9-inch round cake pan. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate bowl, cream together the vegan butter, vegan buttermilk, cane sugar, and vanilla extract. Add the flax-egg and mix until combined. Slowly stir the dry ingredients into the wet ingredients and mix until everything is well-combined. Pour the mixture into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

While the cake is baking, make the frosting. In a medium bowl, cream together the vegan butter and vegan powdered sugar. Add the cocoa powder and vanilla extract and mix until combined. Gradually add the non-dairy milk, one tablespoon at a time, and mix until the desired consistency is reached. When the cake is finished baking, let it cool completely before frosting.

To assemble the cake, place the first layer on a cake plate and spread a layer of frosting on top. Place the second layer on top and spread another layer of frosting. Finally, spread the remaining frosting around the sides of the cake. Enjoy!

Notes

* To make a flax-egg, mix 1 tablespoon ground flaxseed meal with 3 tablespoons water and let sit for 5 minutes. This will create a gel-like consistency that can be used as an egg replacement.
