Ingredients

For the cake:
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda

• 2/3 cup unsweetened cocoa powder
• 2/3 cup vegetable oil
• 1 cup granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 cup buttermilk
• 1 cup fresh or frozen cherries, pitted and chopped

For the frosting:
• 1/2 cup unsalted butter, softened
• 2 cups confectioners’ sugar
• 1 teaspoon vanilla extract
• 3-4 tablespoons heavy cream or milk
• 1/2 cup semi-sweet chocolate chips, melted

For the topping:
• 1/2 cup semi-sweet chocolate chips, melted
• 1/3 cup fresh or frozen cherries, pitted and chopped

Instructions

1. Preheat the oven to 350ºF (175ºC). Grease and flour a 9-inch round cake pan and set aside.

2. In a medium bowl, combine the flour, baking powder, baking soda, salt and cocoa powder. Whisk together until combined.

3. In a large bowl, mix together the oil, sugar, eggs, and vanilla extract until light and creamy. Slowly add in the dry ingredients, alternating with the buttermilk, and stirring until just combined.

4. Gently fold in the cherries and pour the batter into the prepared cake pan.
