Ingredients

1 ½ cups almond flour

2 tablespoons stevia

½ teaspoon baking soda

½ teaspoon salt

6 tablespoons butter, softened

2 tablespoons coconut oil

1 teaspoon vanilla extract

2 eggs

1 cup semi-sweet chocolate chips

Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. In a medium bowl, combine almond flour, stevia, baking soda, and salt. Stir until combined and set aside.

3. In a large bowl, beat together butter, coconut oil, and vanilla extract until light and fluffy. Beat in eggs until well combined.

4. Slowly add in the almond flour mixture to the wet ingredients, stirring until all ingredients are incorporated. Fold in the chocolate chips.

5. Scoop out dough into 1-inch balls and place on prepared baking sheet. Flatten slightly with your hands. Bake for 8-10 minutes, or until edges are golden brown.

6. Let cool for 5 minutes on the baking sheet before transferring to a cooling rack.

Notes

Be sure to not over-bake the cookies. They may look slightly underdone when you take them out of the oven, but they will continue to cook as they cool down. This ensures that your cookies will stay soft and chewy.
