1/3 cup vegetable oil
1 large egg
1/2 cup milk
1 teaspoon vanilla extract
1 cup of semi-sweet chocolate chips
Instructions

2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
3. In a separate bowl, whisk together oil, egg, milk, and vanilla extract. Add wet ingredients to dry ingredients and mix until just combined.
4. Fold in chocolate chips. Do not overmix.
5. Spoon batter into prepared muffin tin, filling each cup about 3/4 full. Bake for 15-20 minutes, or until a toothpick inserted into the center of the muffin comes out clean.
6. Let cool for 5 minutes before removing from muffin tin. Enjoy!
Notes
- If you don’t have white granulated sugar, you can also use light brown sugar.
- For a healthier version, substitute the all-purpose flour with whole wheat flour and use a dairy-free milk alternative such as almond milk.
- For a richer flavor, use dark chocolate chips or a mixture of semi-sweet and dark chocolate chips.
