Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup granulated sugar

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons vegetable oil
  • Sprinkles, nuts, or other toppings (optional)

Instructions

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the vanilla extract and mix until combined.

3. In a separate bowl, whisk together the flour and salt. Add the dry ingredients to the wet ingredients and mix until combined.

4. Roll the dough into 1-inch balls and place on the prepared baking sheet. Bake for 8-10 minutes, or until lightly golden.

5. Remove from oven and let cool completely.

6. In a microwave-safe bowl, melt the chocolate chips and vegetable oil together in 30 second intervals, stirring in between, until melted and smooth.

7. Dip each cookie halfway into the melted chocolate and place on a parchment-lined baking sheet. Sprinkle with your desired topping.

8. Place in the refrigerator for 15 minutes to set the chocolate.

Notes

For a vegan version of this recipe, simply substitute vegan butter and vegan chocolate chips. You can also use any type of chocolate you prefer, such as milk chocolate, dark chocolate, or white chocolate.
