Ingredients

2 cups all-purpose flour

Instructions

1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.

3. In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs and vanilla.

4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chocolate chips, cranberries, and almonds.

5. Divide the dough into two equal pieces. On the prepared baking sheet, shape each piece into a log about 13 inches long and 2 inches wide. Bake for 30 minutes, until golden brown.

6. Remove from the oven and cool for 10 minutes. Slice the logs into 1/2-inch thick slices. Place the slices back on the baking sheet and bake for 10 minutes. Flip the biscotti over and bake for another 10 minutes, until golden brown and slightly crisp.

Notes

For a sweeter biscotti, increase the sugar to 1 cup. You can also use different types of chocolate chips and dried fruits, such as white chocolate chips and dried cherries or dark chocolate chips and dried blueberries. To make gluten-free biscotti, use a gluten-free all-purpose flour blend.
