Ingredients

  • 1 ¼ cups all-purpose flour
  • 2 tablespoons cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup butter, melted
  • 2 eggs
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • 1 teaspoon espresso powder (optional)

Instructions

Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a large bowl, combine the sugar and melted butter, and whisk until combined. Add in the eggs, one at a time, and whisk until smooth. Then add in the buttermilk and vanilla, and whisk until combined.

Add the dry ingredients to the wet ingredients, and whisk until combined. Then fold in the dark chocolate chips and espresso powder (if using).

Pour the batter into the prepared cake pan, and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely before frosting.

Notes

For an extra-rich cake, you can substitute the buttermilk with heavy cream. You can also use semi-sweet chocolate chips, if you prefer.

This cake will keep well in an airtight container at room temperature for up to 3 days. It can also be frozen for up to 3 months.
