Yule log or bûche de Noël is a traditional Christmas dessert that is prepared in many countries around the world. It is a rolled cake which is filled with cream and is often decorated with different decorations including chocolate. This chocolate yule log recipe is perfect for Christmas, it is moist and rich and filled with a delicious chocolate mousse. Ingredients

For the cake:

-3 eggs

-1/2 cup sugar

-1/2 cup all-purpose flour

-1/4 teaspoon baking powder

-1/4 teaspoon salt


For the filling:

-4 ounces semisweet chocolate, chopped

-1/2 cup heavy cream

-1 tablespoon sugar

-1/4 teaspoon vanilla extract


For the frosting:

-4 ounces semisweet chocolate, chopped

-1/4 cup heavy cream

-1 tablespoon unsalted butter, softened

-1/2 cup confectioners' sugar

-1/4 teaspoon vanilla extract


For the decoration:

-Chocolate curls

-Powdered sugar

-Fresh berries

-Mint leaves

Instructions

1. Preheat oven to 350°F (177°C). Line a 10x15-inch jelly roll pan with parchment paper.

2. In a medium bowl, whisk together the eggs and sugar until light and fluffy. Add the flour, baking powder and salt, and whisk until combined. Pour the batter into the prepared pan and spread evenly. Bake for 15 minutes or until golden brown.

3. Remove from the oven and cover with a damp kitchen towel. Let cool for 10 minutes, then carefully roll up into a log shape. Place on a wire rack and let cool completely.

4. To make the filling, place the chopped chocolate in a medium heatproof bowl. In a small saucepan, heat the cream and sugar over medium heat, stirring constantly, until the sugar is dissolved and the mixture is hot. Pour the hot cream over the chocolate and let sit for 2 minutes. Whisk until smooth, then stir in the vanilla. Let cool to room temperature.

5. Unroll the cake and spread the cooled chocolate mixture over the cake, leaving a 1-inch border. Roll the cake back up into a log shape and place on a serving platter.

6. To make the frosting, place the chopped chocolate in a medium heatproof bowl. In a small saucepan, heat the cream until hot. Pour the hot cream over the chocolate and let sit for 2 minutes. Whisk until smooth, then stir in the butter, sugar and vanilla. Spread the frosting over the cake and decorate with the chocolate curls, powdered sugar, berries and mint leaves.

7. Refrigerate until ready to serve.

Notes

This cake can be stored in the refrigerator for up to 5 days. To freeze, wrap tightly in plastic wrap and then place in a freezer bag. Freeze for up to 3 months. To defrost, thaw overnight in the refrigerator.
