Ingredients

  • 1/2 cup (1 stick) butter, softened

  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

Preheat oven to 350 degrees F. Line baking sheets with parchment paper.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the vanilla extract and eggs. Add the cocoa powder, flour, baking powder and salt and mix until just combined.

Scoop tablespoon-sized portions of dough onto the prepared baking sheets. Roll each portion of dough into a ball and then roll in the powdered sugar. Place the balls of dough at least 2 inches apart on the prepared baking sheets.

Bake for 8-10 minutes, or until the edges of the cookies are just beginning to set. Let cool on the baking sheets for 2-3 minutes before transferring to a cooling rack.

Notes

For an extra-chocolatey version, try adding 1/2 cup of mini chocolate chips to the cookie dough before scooping and rolling in the powdered sugar.

The cookies will keep for several days when stored in an airtight container. For best results, store at room temperature.
