Ingredients
- ¾ cup cocoa powder

- 1 teaspoon vanilla extract
- Pinch of sea salt
- ½ cup shredded coconut, for rolling
Instructions
1. In a food processor, combine the cocoa powder, dates, almonds, walnuts, coconut oil, maple syrup, vanilla extract, and sea salt. Pulse until the mixture comes together and forms a sticky dough.
2. Use a tablespoon to scoop out the dough and roll it into balls. Place the balls on a baking sheet lined with parchment paper.
3. Place the shredded coconut in a shallow bowl. Roll each ball in the shredded coconut until it’s completely covered.
4. Place the balls in an airtight container and store in the fridge for up to one week or in the freezer for up to two months. Enjoy!
Notes
You can use any type of nut or seed that you like. Almonds, walnuts, pecans, and hazelnuts all work well. You can also use sunflower or pumpkin seeds if you prefer.
If your dough is too dry, add a bit more coconut oil. If it’s too wet, add a bit more cocoa powder.
You can also roll the balls in cocoa powder, chopped nuts, or crushed candy instead of coconut.
