  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup warm water

For the Cheesecake Layer:
  • 2 (8-ounce) packages cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

For the Chocolate Ganache Topping:
  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract

For the Garnish:
  • Chocolate chips

Instructions

To make the Chocolate Cake Layer: Preheat oven to 350°F. Grease and flour an 8-inch springform pan and set aside. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In a separate large bowl, mix together the sugar, oil, and vanilla extract until combined. Slowly add in the dry ingredients to the wet ingredients and mix until combined. Slowly add in the warm water and mix until a smooth batter forms. Pour the batter into the prepared pan and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool before adding the cheesecake layer.

To make the Cheesecake Layer: In a large bowl, beat together the cream cheese, sugar, and vanilla extract until light and fluffy. Add in the eggs, one at a time, and mix until just combined. Pour the cream cheese mixture over the cooled cake layer and spread evenly. Bake for 25-30 minutes, or until the center is set. Allow the cheesecake to cool completely before adding the ganache topping.

To make the Chocolate Ganache Topping: Place the heavy cream and chocolate chips in a medium heat-proof bowl. Place the bowl over a saucepan of simmering water and stir until the chocolate chips are completely melted and the mixture is smooth. Remove from heat and stir in the vanilla extract. Pour the ganache over the cooled cheesecake and spread evenly. Sprinkle with chocolate chips, if desired.

To serve: Run a knife around the edge of the pan and carefully remove the cheesecake from the pan. Slice and serve. Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Notes

For a lighter cheesecake, you can use reduced-fat cream cheese. You can also use a smaller pan to make a thicker cheesecake. To make the cake layer gluten-free, use a gluten-free flour blend in place of the all-purpose flour.
