Preheat oven to 375°F. Line two baking sheets with parchment paper or silicone baking mats. In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, using an electric mixer, beat together the butter and both sugars until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat until just combined. Gradually add the flour mixture, beating until just combined. Stir in the chocolate chips and walnuts, if using.

Notes

For a softer cookie, underbake the cookies slightly. You can also use a combination of white and semisweet chocolate chips, or even butterscotch chips, if desired. If you don't have unsalted butter, you can use salted butter, just omit the salt in the recipe.
