Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mashed banana
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup cocoa powder
  • 1/2 cup buttermilk

Instructions

Preheat oven to 350 degrees. Grease a 12-cup muffin tin or line with cupcake liners.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, until fully incorporated. Stir in vanilla and mashed banana.

In a separate bowl, whisk together flour, baking soda, salt, and cocoa powder. Slowly add dry ingredients to wet ingredients, alternating with buttermilk until fully combined.

Divide batter evenly among muffin cups. Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow cupcakes to cool for 10 minutes before transferring to a wire rack to cool completely.

Once cupcakes are cool, frost with desired frosting.

Notes

For an even more delicious cupcake, you can add 1/2 cup of chocolate chips to the batter before baking.

To make sure your cupcakes are light and fluffy, don’t overmix the batter. Mix just until the ingredients are combined and no more.

If you don't have buttermilk, you can substitute with regular milk and 1 teaspoon of lemon juice.
