Ingredients

Instructions

Step 1: Preheat oven to 375°F. Grease muffin pan with butter or cooking spray. Step 2: In a medium bowl, whisk together flour, baking soda, and salt. Set aside. Step 3: In a large bowl, cream together butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy. Beat in eggs one at a time. Step 4: Gradually add in the dry ingredients and mix until just combined. Stir in the chocolate chips. Step 5: Using a cookie scoop or spoon, scoop the cookie dough into the prepared muffin pan. Bake for 10 to 12 minutes or until golden brown. Let cool for 10 minutes before transferring to a wire rack to cool completely. Step 6: To make the chocolate filling, place the chocolate chips, heavy cream, and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth. Let cool. Step 7: To assemble the cookie cups, spoon the melted chocolate into each cookie cup. Let cool until set. Step 8: To make the chocolate ganache, place the chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth. Let cool. Step 9: Spoon the ganache over the top of the cooled cookie cups. Let cool until set.
