Ingredients

For the brownie layer:

Instructions

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan. In a medium bowl, sift together the flour, cocoa powder, baking powder and salt. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually beat in the dry ingredients until just blended. Spread into the prepared pan.

Bake for 20 to 25 minutes in the preheated oven, until brownies are set. Allow to cool completely before assembling. Once cooled, cut the brownies into 12 equal pieces. Place 6 pieces in the bottom of a 9x13 inch baking dish. Spread softened ice cream over the brownies until even. Sprinkle mini chocolate chips over the ice cream. Place the remaining 6 brownie pieces over the ice cream and press down lightly.

In a small saucepan, heat the heavy cream over low heat until hot but not boiling. Remove from heat and stir in the chocolate chips until melted. Pour the chocolate over the brownie ice cream sandwiches and spread evenly. Place in the freezer for several hours, or until firm.

Notes

If the chocolate coating is too thick when pouring over the sandwiches, add a tablespoon of heavy cream to thin it out. To serve, cut into squares or triangles. Keep any leftovers stored in an airtight container in the freezer.
