Description:

A chocolate lava cake is a classic dessert that everyone loves. It’s a decadent treat that’s made with a rich chocolate cake, filled with a molten, gooey center. The traditional way to make a chocolate lava cake is to bake it in individual ramekins. But if you don’t have ramekins on hand, you can still make this delicious dessert. This recipe for chocolate lava cake without ramekins is easy to make, and will be sure to impress your family and friends.

Ingredients:

For the cake:

• 1/2 cup (1 stick) unsalted butter, melted

• 1/2 cup granulated sugar

• 2 large eggs

• 1 teaspoon vanilla extract

• 1/2 cup all-purpose flour

• 1/3 cup cocoa powder

• 1/4 teaspoon baking powder

• 1/4 teaspoon salt

For the filling:

• 1/2 cup semi-sweet chocolate chips

• 2 tablespoons unsalted butter

• 2 tablespoons heavy cream

• 1/4 cup powdered sugar

Instructions:

1. Preheat oven to 375°F. Grease a 9-inch round baking pan with butter or baking spray. Set aside.

2. In a medium bowl, whisk together melted butter and sugar. Add eggs and vanilla extract, and whisk until combined.

3. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients, and mix until just combined. Do not overmix.

4. Pour batter into the prepared pan, and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

5. While the cake is baking, make the filling. In a small saucepan over low heat, melt together chocolate chips, butter, and heavy cream. Stir until smooth. Remove from heat and stir in powdered sugar. Set aside.

6. Once the cake is done baking, remove from oven and let cool for 10 minutes. Pour the chocolate filling over the top, spreading evenly. Let cool for another 10 minutes before serving.

Notes:

• This cake can be served warm or at room temperature. If you like your cake extra gooey, take it out of the oven a few minutes before it is done. The center will still be a bit runny, but will continue to cook as it cools.

• If you don’t have a 9-inch round baking pan, you can also use a 9x13-inch baking dish. The baking time will need to be adjusted accordingly.

• For an extra decadent treat, top the cake with ice cream, whipped cream, or a drizzle of chocolate sauce.
