Ingredients

For the crust:
1 cup (115 g) all-purpose flour, plus more for dusting
1/4 cup (50 g) granulated sugar
1/4 teaspoon salt
1/2 cup (115 g) cold unsalted butter, diced

For the mousse:
2 (7-ounce) packages dark chocolate chips
2 cups (480 ml) heavy cream
1/4 cup (50 g) granulated sugar
2 teaspoons vanilla extract
2 tablespoons (30 ml) brandy, optional
1/4 teaspoon salt

Instructions

To make the crust: Preheat the oven to 350°F (175°C). Grease or line a 9-inch (23 cm) springform pan with parchment paper.

In a medium bowl, whisk together the flour, sugar, and salt. Cut in the butter with a pastry blender or two forks until the mixture resembles coarse crumbs.

Press the crumb mixture into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden. Allow to cool completely before adding the filling.

To make the mousse: Place the chocolate chips in a medium heat-proof bowl. In a small saucepan, heat the cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate chips and whisk until the chocolate is completely melted and the mixture is smooth.

Whisk in the sugar, vanilla, brandy, and salt. Refrigerate for 30 minutes, or until the mixture is thick and spreadable.

To assemble the cake: Spread the mousse over the cooled crust. Refrigerate for at least 2 hours, or until the mousse is firm. Serve chilled.

Notes

For an extra-rich mousse, replace the brandy with 1/4 cup (60 ml) of dark rum, whiskey, or cognac.

You can substitute semisweet or white chocolate chips for the dark chocolate if desired.
