Ingredients

  • 2 cups of dark chocolate chips
  • 3/4 cup of heavy cream
  • 1/2 cup of butter
  • 3 eggs
  • 1/2 cup of sugar
  • 1/4 cup of all-purpose flour
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of cocoa powder
  • 1/2 cup of heavy cream (for mousse)
  • 1/4 cup of confectioners' sugar (for mousse)
  • 1/2 teaspoon of vanilla extract (for mousse)

Instructions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch round cake pan.

Melt the chocolate chips and butter in a double boiler. Once melted, remove from heat and let cool.

In a separate bowl, beat eggs until light and fluffy. Slowly add in the sugar and beat until combined. Then add the melted chocolate mixture and beat until incorporated.

In a third bowl, sift together the flour and cocoa powder. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Pour the batter into the prepared cake pan.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool completely.

To make the mousse, beat the heavy cream until it forms stiff peaks. Add in the confectioners' sugar and vanilla extract and beat until combined. Refrigerate until ready to assemble cake.

To assemble the cake, cut the cooled cake into two or three layers. Spread the mousse between each layer and spread remaining mousse on top and sides of the cake. Refrigerate for 1-2 hours before serving.

Notes

You can use regular semi-sweet chocolate chips if you do not have dark chocolate chips. If desired, you can also add other ingredients such as chopped nuts, dried fruit, or chocolate chips to the cake batter.
