A Suji Chocolate Cake is a classic Indian dessert that is sure to please any crowd. It is a moist and fluffy cake, made with semolina (suji) and cocoa powder, and layered with a rich chocolate ganache. This delicious cake also contains nuts and raisins for extra crunch and flavor. It is the perfect dessert for any special occasion, and can easily be served as a snack or tea time treat. The best part about this recipe is that it can be made in a few simple steps, and it is sure to be a crowd pleaser.

Ingredients

To make a Suji Chocolate Cake, you will need the following ingredients:

  • 2 cups of semolina (suji)
  • 1 cup of sugar
  • 1 cup of cocoa powder
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 cup of vegetable oil
  • 1 cup of milk
  • 1 teaspoon of vanilla extract
  • 1/2 cup of chopped nuts (almonds, walnuts, and/or pistachios)
  • 1/4 cup of raisins
  • For the ganache: 2 cups of dark chocolate chips and 1 cup of heavy cream

Instructions

The first step in making a Suji Chocolate Cake is to preheat the oven to 350°F. Grease a 9-inch round baking pan and set aside. In a large bowl, mix together the semolina, sugar, cocoa powder, baking powder, and baking soda. In a separate bowl, mix together the oil, milk, and vanilla extract. Slowly add the wet ingredients to the dry ingredients and mix until the batter is smooth. Fold in the chopped nuts and raisins. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Once the cake is done baking, let it cool completely before adding the ganache. To make the ganache, heat the cream in a saucepan over medium heat until it starts to boil. Remove from heat and add the chocolate chips. Let the mixture sit for a few minutes, then whisk until the chocolate is completely melted and the ganache is smooth. Spread the ganache over the cooled cake and let it set before serving.

Notes

If you don't have semolina, you can use all-purpose flour instead. For a more decadent cake, you can add a layer of chocolate frosting instead of ganache. If you don't have dark chocolate chips, you can also use milk or white chocolate.
