  • 2 eggs, separated

Instructions

1. Begin by making the dark chocolate mousse layer. In a medium saucepan, heat the semisweet chocolate chips and butter over medium-low heat, stirring constantly until melted and smooth. Remove from the heat and let cool slightly.
2. In a medium bowl, using an electric mixer, beat the heavy cream, sugar, and vanilla extract until soft peaks form. 3. In a separate bowl, beat the egg whites until stiff peaks form. 4. Add the melted chocolate mixture to the whipped cream and mix until combined. 5. Gently fold in the egg whites until just combined. 6. Pour the mousse into a 9-inch springform pan and spread evenly. Place in the refrigerator to chill for 30 minutes. 7. Repeat steps 1-6 for the milk and white chocolate mousse layers, layering the mousses in the pan. 8. Chill the three-layer mousse in the refrigerator for at least 4 hours. 9. Before serving, carefully remove the sides of the springform pan and serve chilled.

Notes
