Chocolate Cherry Mince Pie Recipe

Ingredients
For the pastry:
- 250g plain flour
- 100g cold butter, cubed
- 2 tablespoons caster sugar
- 2 tablespoons ice-cold water
- 200g mincemeat
- 50g dark chocolate chips
- 50g dried cherries
Instructions
Making the pastry:
- Sift the flour into a bowl and add the butter and sugar.
- Rub the butter into the flour until it resembles breadcrumbs.
- Add the cold water and mix until the dough comes together.
- Wrap the dough in cling film and place it in the fridge to chill for at least 30 minutes.
- In a bowl, mix together the mincemeat, chocolate chips and cherries.
- Set aside.
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Roll out the pastry to about 5mm thick.
- Cut out circles using a 6cm (2.5in) cutter and place them in a greased muffin tin.
- Fill each pastry case with the mincemeat mixture.
- Cut out lids from the remaining pastry and place them on top of the pies.
- Brush with a beaten egg and bake in the oven for 15-20 minutes or until golden brown.
- Allow to cool before serving.
Notes
These pies can be stored in an airtight container for up to three days.
