Ingredients

• 2 tablespoons vanilla extract

For the glaze:

• ¾ cup semi-sweet chocolate chips

• ¼ cup heavy cream

• 2 tablespoons butter

Instructions

1. Preheat oven to 350°F. Grease a 9-inch pie plate.

2. In a medium bowl, combine the cookie crumbs, melted butter, and sugar. Mix until combined.

3. Press the cookie crumb mixture into the bottom and up the sides of the prepared pie plate.

4. Bake for 10 minutes. Let cool completely.

5. In a medium saucepan, combine the heavy cream, chocolate chips, butter, sugar, and vanilla extract. Cook over medium heat, stirring constantly, until the chocolate is melted and the mixture is smooth.

6. Pour the chocolate mixture into the prepared crust and spread evenly. Refrigerate for at least 2 hours, until set.

7. In a medium bowl, combine the chocolate chips, heavy cream, and butter. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and the mixture is smooth.

8. Pour the chocolate glaze over the cooled pie and spread evenly. Refrigerate for at least 1 hour before serving.

Notes

• This pie can be stored in an airtight container in the refrigerator for up to 5 days.

• If you want to make this pie vegan, you can substitute the butter for vegan butter and the heavy cream for coconut cream or almond milk.

• If you want a richer, more intense chocolate flavor, you can use dark chocolate chips instead of semi-sweet chips.
