Ingredients

- 1 cup creamy peanut butter

- 1/2 cup powdered sugar

- 1/4 teaspoon salt

- 1/4 teaspoon vanilla extract

- 6 ounces semi-sweet chocolate chips

- 1 tablespoon coconut oil

- Optional: sprinkles, chopped peanuts, or other toppings

Instructions

1. In a medium bowl, combine the peanut butter, powdered sugar, salt, and vanilla extract until well mixed. Line a baking sheet with parchment paper.

2. Use a spoon or cookie scoop to drop tablespoon-sized balls of the peanut butter mixture onto the parchment paper. Use your hands to shape them into egg-like shapes. Place the baking sheet in the freezer for 10 minutes.

3. Place the chocolate chips and coconut oil in a microwave-safe bowl. Microwave on high for 30 seconds, then stir. If the chips are not completely melted, microwave for an additional 10-15 seconds. Stir until smooth.

4. Remove the peanut butter eggs from the freezer. Dip each egg into the melted chocolate and place it back on the parchment paper. Top with optional toppings, if desired. Place the baking sheet in the refrigerator for 15 minutes.

5. Serve and enjoy!

Notes

- Be sure to use creamy peanut butter for this recipe. If using natural peanut butter, you may need to adjust the amount of powdered sugar and salt.

- If the chocolate chips don’t melt completely, you can add a few more seconds of microwaving time. Just be sure to watch them carefully so they don’t burn.

- You can also use a double boiler to melt the chocolate chips if you don’t want to use the microwave.
