Ingredients

Instructions

Start by making the mousse. In a double boiler, melt the white chocolate chips and butter. Once melted and smooth, remove from the heat and set aside to cool.

In a large bowl, combine the heavy cream, sugar, and vanilla extract. Beat with an electric mixer until stiff peaks form. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cream mixture. Gently fold in the melted white chocolate mixture.

Next, make the ganache. In a double boiler, melt the white chocolate chips and cream. Once melted and smooth, remove from the heat and set aside to cool.

To assemble the trifle, layer the mousse, ganache, and mixed berries in a trifle or other glass serving dish. Repeat the layers until the dish is full. Top with the sweetened coconut, if desired.

Notes

If you don’t have a double boiler, you can make one by filling a pot with a few inches of water and placing a heat-safe bowl on top. The water should not touch the bowl. This will act as a double boiler. Be sure to use a bowl that is heat-safe and can handle the heat of the boiling water.

This trifle can be made ahead of time and stored in the refrigerator for up to two days. If you plan to make it ahead of time, it is best to assemble it but not top it with the coconut until just before serving.
