Ingredients
For the pastry:
- 360g plain flour
- 225g cold butter, cubed
- 1 teaspoon salt
- 2 tablespoons cold water
For the filling:
- 200g mincemeat
- 150g fresh cherries, pitted and halved
- 2 tablespoons brandy
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
For the topping:
- 100g dark chocolate, melted
- 2 tablespoons icing sugar, for dusting
Instructions
1. To make the pastry, combine the flour and salt in a large bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Add the cold water, a tablespoon at a time, and mix until the pastry comes together. Knead the pastry briefly and then wrap in clingfilm and chill for 30 minutes.
2. Preheat the oven to 200°C/400°F/Gas Mark 6. Grease a 12-hole muffin tin.
3. Roll out the pastry on a lightly floured surface to about 3mm thick. Cut out 12 circles, about 8cm in diameter, and line the holes in the muffin tin. Trim off any excess pastry.
4. To make the filling, combine the mincemeat, cherries, brandy, cinnamon and cloves in a bowl. Spoon the filling into the pastry cases.
5. Bake the pies in the preheated oven for 15-20 minutes, or until the pastry is golden-brown. Allow to cool in the tin.
6. Once the pies have cooled, melt the chocolate in a heatproof bowl set over a pan of barely simmering water. Spread the melted chocolate over the top of the pies and sprinkle with icing sugar. Allow the chocolate to set before serving.
Notes
If you don’t have brandy, you can substitute it with orange or apple juice. You can also use pre-made mincemeat for this recipe, if you prefer.
