Instructions

To make the pastry crust: In a medium bowl, whisk together the flour and salt. Add the cold butter cubes and use a pastry blender or two forks to cut the butter into the flour until it resembles coarse crumbs. Add the cold water a tablespoon at a time, stirring with a fork until the dough comes together. Gather the dough into a ball and wrap in plastic wrap. Refrigerate for at least 30 minutes.

Preheat the oven to 350°F. Grease a 9-inch tart pan with butter. On a lightly floured surface, roll the dough out into a 12-inch circle. Place the dough in the tart pan and press it into the bottom and sides. Trim the excess dough and prick the bottom of the crust with a fork. Bake the crust for 15 minutes, or until golden brown.
