Ingredients

For the crust:

  • 1 1/2 cups crushed chocolate cookies
  • 1/4 cup melted butter

For the filling:

  • 8 ounces cream cheese, softened
  • 3/4 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon peppermint extract

For the topping:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • Crushed candy canes or peppermint candies, for garnish

Instructions

To make the crust: Preheat oven to 350°F. Grease a 9-inch pie plate with butter or non-stick cooking spray. In a medium bowl, combine the crushed cookies and melted butter. Stir until combined. Press the mixture into the bottom and up the sides of the prepared pie plate. Bake for 8-10 minutes. Allow to cool completely before adding the filling.

To make the filling: In the bowl of a stand mixer, beat the cream cheese until light and fluffy. Add the heavy cream, sugar, and peppermint extract and beat until combined. Pour the filling into the cooled crust. Cover and refrigerate for at least 4 hours or overnight.

To make the ganache topping: In a small saucepan, heat the chocolate chips and cream over low heat, stirring constantly, until melted and smooth. Pour the ganache over the top of the pie. Sprinkle with crushed candy canes or peppermint candies. Refrigerate until ready to serve.

Notes

If the crust is too crumbly, add 1-2 tablespoons of melted butter to help it hold together. The pie can also be frozen for up to 1 month. Let the pie thaw in the fridge overnight before serving.
