It pairs perfectly with a scoop of ice cream or a dollop of whipped cream for an extra decadent dessert.

Ingredients

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup cocoa powder

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 cup buttermilk

1/2 cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

1 cup hot water

Instructions

1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans and set aside.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, combine the buttermilk, oil, eggs, and vanilla and mix until smooth.

3. Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Slowly add the hot water and mix until the batter is smooth.

4. Divide the batter evenly between the two prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

5. Allow the cakes to cool in the pans for 10 minutes before transferring to a cooling rack to cool completely.

6. Once cooled, frost the cake with your favorite frosting and enjoy!

Notes

Make sure to use hot water for the batter. This will help to activate the baking soda and baking powder, resulting in a light and fluffy cake. If you don't have buttermilk on hand, you can substitute regular milk and add 1 tablespoon of white vinegar or lemon juice to the mixture.

You can also use different types of oil such as canola, coconut, or olive oil. Different types of oil will result in slightly different flavors and textures, so experiment to find out what you like best.
