Ingredients

For the tart:

  • 1 1/4 cups plain flour
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 3 tablespoons cold water

Instructions

To make the tart shell, start by combining the flour, salt, and butter in a large bowl. Use your fingers to rub the butter into the flour until the mixture resembles fine breadcrumbs. Add the cold water and mix until a dough forms. Wrap the dough in clingfilm and refrigerate for 30 minutes.

Preheat the oven to 350F (180C). Roll out the pastry to fit a 9-inch tart tin. Place the pastry in the tin and press it into the edges. Prick the base with a fork. Line the pastry with baking paper and fill with baking beans. Bake for 15 minutes.

Remove the baking beans and paper and bake for a further 10 minutes, or until the pastry is golden brown and cooked through. Remove from the oven and leave to cool.

To make the filling, melt the chocolate in a heatproof bowl over a pan of simmering water. Stir in the orange zest. Pour the mixture into the cooled tart shell and spread it out evenly. Sprinkle over the demerara sugar and flaked almonds. Bake for 15 minutes.

Notes

You can use any type of chocolate for this recipe, from milk to dark to white. For a more intense chocolate flavour, use dark chocolate.

You can also experiment with different flavour combinations. Try adding a little cinnamon and nutmeg for a spiced version, or some chopped nuts for a crunchy texture.

If you don't have demerara sugar, you can use any other type of sugar, such as caster sugar or brown sugar.
