Ingredients
- 250g Digestive biscuits
- 125g butter
- 200g soft light brown sugar
- 2 tablespoons golden syrup
- 397g can condensed milk
- 200g dark chocolate
- 50g chopped nuts (optional)
Instructions
1. Preheat the oven to 180°C (350°F). Line a 20x30cm baking dish with baking paper.
2. Crush the digestive biscuits until they are fine crumbs. Melt the butter in a small pan and add to the biscuit crumbs. Mix until the crumbs are well coated with the butter.
3. Place the crumbs into the prepared baking dish and press them down firmly to form an even base. Bake in the preheated oven for around 10 minutes, until golden brown.
4. Meanwhile, put the sugar, syrup, and condensed milk into a medium pan and heat slowly. Stir regularly until the mixture starts to thicken and bubble. Reduce the heat and simmer for around 10 minutes, stirring continuously.
5. Remove the biscuit base from the oven and pour the caramel mixture over the top. Spread out evenly. Return to the oven and bake for a further 15 minutes.
6. Melt the chocolate in a heatproof bowl over a pan of simmering water. Once melted, pour the chocolate over the caramel layer and spread out evenly. Sprinkle with the chopped nuts (if using) and leave to cool.
7. Refrigerate for at least 2 hours before slicing. Serve chilled.
Notes
This Chocolate Caramel Slice can be stored in an airtight container in the refrigerator for up to 5 days. It can also be frozen for up to 3 months. If freezing, place the slices in a single layer on a baking sheet, freeze until solid, and then store in airtight containers.
