Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/4 cup Hennessy cognac
  • 1/2 cup mini chocolate chips
  • For the Frosting:
  • 1/2 cup (1 stick) butter, softened
  • 3 cups confectioners' sugar
  • 3 tablespoons Hennessy cognac
  • 1-2 tablespoons heavy cream

Instructions

Preheat oven to 350°F. Line cupcake pan with liners and set aside.

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs one at a time until fully incorporated. Beat in the vanilla, buttermilk, and Hennessy until fully combined.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the mini chocolate chips.

Fill the cupcake liners 3/4 full with the batter. Bake for 18-20 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Let cool completely before frosting.

To make the frosting, beat the butter until light and fluffy. Gradually add the confectioners' sugar, Hennessy, and heavy cream and beat until creamy. Frost the cupcakes and sprinkle with mini chocolate chips if desired.

Notes

These cupcakes are best served the same day they are made. The alcohol in the frosting will fade over time, so if you are planning to make them in advance, you may want to reserve some of the Hennessy to add to the frosting right before serving.

If you don't have buttermilk, you can make your own by combining 1/2 cup of milk with 1 teaspoon of white vinegar or lemon juice. Let stand for 10 minutes before using.
