Description

Ingredients

-2 cups all-purpose flour

-1/2 cup unsweetened cocoa powder

-1 teaspoon baking powder

-1 teaspoon baking soda

-1/2 teaspoon salt

-3/4 cup vegetable oil

-1 cup white sugar

-2 teaspoons vanilla extract

-2 large eggs

-1 cup buttermilk

-1/2 cup semi-sweet chocolate chips (optional)

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch square baking pan.

2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda and salt. In a separate bowl, beat together the oil, sugar, vanilla and eggs until light and fluffy. Slowly beat in the dry ingredients, alternating with the buttermilk. Stir in the chocolate chips, if desired.

3. Pour the batter into the prepared pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

The cake can be stored in an airtight container at room temperature for up to 3 days. The cake can also be frozen for up to 2 months. Wrap it tightly in plastic wrap first, then in aluminum foil.
