Ingredients

For Chocolate Cake:

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
2. In a large bowl, mix together the flour, sugar, cocoa, baking soda, baking powder and salt. Add the eggs, oil, buttermilk and vanilla; beat for 2 minutes on medium speed. Stir in the boiling water last. Batter will be thin.
3. Pour evenly into the prepared pans. Bake 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center of the cake comes out clean. Let cool for 10 minutes, then remove from pans and cool completely.
4. To make the frosting, melt the butter in a medium saucepan. Stir in the cocoa and remove from heat. Beat in the powdered sugar, milk and vanilla until the frosting is smooth and of spreading consistency. Spread between layers and over top and sides of cake.

Notes

When pouring the boiling water into the cake batter, be careful not to overmix the batter. Overmixing will make the cake dense and dry.
If you don’t have buttermilk on hand, you can use plain yogurt or sour cream instead.
For best results, let the cake cool completely before frosting.
