Ingredients


For the pastry base:

  • 250g plain flour
  • 125g cold butter, cubed
  • pinch of salt
  • 4-5 tablespoons of cold water

For the filling:
  • 200g dark chocolate
  • 140ml double cream
  • 1 tablespoon chilli flakes
  • 2 tablespoons caster sugar

Instructions


1. Preheat the oven to 180C/ 160C Fan/ Gas 4.
2. To make the pastry, sift the flour into a bowl and add the cubed butter. Using your hands, rub the butter into the flour until it resembles breadcrumbs.
3. Add a pinch of salt and then gradually add 4-5 tablespoons of cold water, stirring the mixture with a round-bladed knife until the dough comes together.
4. Wrap the dough in clingfilm and place in the fridge for 20 minutes.
5. Once the pastry has chilled, lightly flour a clean surface and roll out the pastry to about 3mm thickness. Line a greased 20cm tart tin with the pastry, pressing it into the edges.
6. Prick the pastry base with a fork, line with baking parchment and fill with baking beans.
7. Bake in the centre of the oven for 20 minutes. Remove the parchment and beans and bake for a further 10 minutes until the pastry is golden and cooked through.
8. To make the filling, break the chocolate into small pieces and place in a heatproof bowl.
9. Heat the cream until it just starts to boil, then pour over the chocolate. Leave to stand for 1 minute, then stir until the chocolate has melted and the mixture is smooth.
10. Stir in the chilli flakes, caster sugar and a pinch of salt.
11. Pour the chocolate mixture into the pastry case and spread evenly.
12. Place the tart in the fridge for at least 1 hour until set.
13. Serve chilled with cream or ice cream.

Notes


If you want to make the pastry ahead of time, you can store it in the fridge for up to a day before using. You can also freeze the pastry for up to 3 months.
